Apple Pie Overnight Oats

Apple pie overnight oats are a delicious and convenient breakfast option that captures the flavors of apple pie in a wholesome and easy-to-prepare dish. It combines rolled oats, diced apples, and warm spices like cinnamon, all soaked in almond milk overnight to create a creamy, flavorful, and satisfying morning meal.



Ingredients:


For the Base:

1 cup organic oats

1 cup organic almond unsweetened milk

1 Tbs chia seeds

1 tablespoon maple syrup (organic)

1 teaspoon vanilla extract (organic)

A pinch of salt

For the Apple Pie Layer:

2 medium-sized apples, peeled and diced (organic)

1 tablespoon coconut oil (organic)

2 tablespoons maple syrup (organic)

1 teaspoon ground cinnamon

Pinch of salt


For Topping:

2 tablespoons chopped nuts (almonds, walnuts, or pecans) (organic)

2 tablespoons dried cranberries or raisins (organic)

Additional maple syrup for drizzling (optional, organic)


Instructions:


Prepare the Apple Pie Layer:

In a saucepan, heat the coconut oil over medium heat.

Add the diced apples, maple syrup, ground cinnamon, ground nutmeg, and a pinch of salt.

Cook for about 10-12 or until the apples are soft and caramelized.

Remove from heat and let it cool.

Prepare the Base:

In a mixing bowl, combine the rolled oats, almond milk, chia seeds, maple syrup, vanilla extract, and a pinch of salt.

Stir well until all ingredients are well combined.


Assemble:


In two jars or containers, layer the overnight oats base with the prepared apple pie mixture.

Start with a layer of overnight oats, then add a layer of the apple pie filling, and repeat until the jar is filled.


Refrigerate:

Cover the jars with lids and refrigerate overnight or for at least 4 hours to allow the oats to soak and flavors to meld.


Serve:

In the morning, give the oats a good stir.

Top with chopped nuts, dried cranberries or raisins, and drizzle with additional maple syrup if desired.
